Roasted Sweet Potato

This is my absolute favorite way to eat sweet potato!

Ingredients:

  • 3 lb sweet potato
  • ½ C butter
  • salt

Instructions:

Preheat oven to 425° F.

Peel potatoes and cut into uniform size chunks.

Melt the butter, pour a thin layer of butter into a large baking dish and spread the potatoes out in the dish. Then brush the potatoes with butter so that they are coated.

Sprinkle with salt.

Roast potatoes for 30-45 minutes.
